Three rice balls at once, each the same clean triangle. Wet the board and the mold, half-fill the three cavities with rice, add a filling, top up with rice and press; run a finger along the edge and lift the mold away. The rice comes out firm enough to hold its shape and loose enough to eat. Both pieces are unfinished hinoki cypress: the wood takes up a little moisture so the rice does not stick, and lends its faint scent. Each cavity holds about 75 g of rice. For breakfast, lunch boxes, picnics, or the New Year table.
Not for the microwave or dishwasher. Wash by hand, dry thoroughly.
